I wanted a portable chocolate treat that I could take with me while I travel and that would stick to my Paleo diet. So I created these rich chocolatey cupcakes that are sweet, sticky, and have that traditional cupcake texture we all know and love.
The key to these cupcakes is the topping flavor. While the cupcakes are certainly savory and sweet without the topping, you can customize your own flavored topping to change the overall flavor of the cupcake. For example, I have made these cupcakes with a rich chocolate sauce that turns them into a death-by-chocolate cupcake that is an amazingly awesome double dose of chocolate in your mouth. So experiment and try new toppings to see which you prefer.
Ingredients:
1 cup almond flour
1/4 cup coconut flour
1 tsp baking soda
1/8 tsp salt
1/4 cup unsweetened cocoa powder
4 eggs
1 tsp vanilla extract
1/2 cup raw honey, melted
Topping ingredients:
2 tbsp ghee/clarified butter
1/4 cup raw honey
1/2 tsp vanilla extract
1/4 tsp almond extract
1/8 tsp salt
Directions:
Pre heat the oven at 350.
Mix all of the dry cupcake ingredients into a medium mixing bowl: cocoa, baking soda, salt, and the flours.
In a small bowl mix together the wet ingredients: eggs, vanilla, and melted honey.
Combine the wet ingredients into the dry and mix very well.
Line a muffin tin with large cupcake/baking paper inserts.
Fill each insert with approximately 2 tbsp of cupcake batter or until each insert is about half filled.
Bake at 350 for approximately 25-30 minutes or until a test toothpick is clean when pressed into the center of the cupcakes.
For the topping, simply add the honey and the ghee to a small pan over medium heat and allow to reduce while stirring.
Once the mixture has reduced and has blended well, remove from the heat and add the salt, almond extract, and vanilla extract. Whisk or mix very well to ensure the flavors are spread throughout evenly.
Once the cupcakes have been removed from the oven, gently drizzle about 1-2 tsp of the topping for each cupcake. Try to avoid spilling the topping over the paper baking inserts.
Allow the cupcakes and the topping 5 minutes or so to cool off.
Warning! These cupcakes will be sticky to your hands and so will the paper wrappers! If you plan on taking a couple with you for travel, simply remove the paper wrappers prior to storing them for your travels.
