Key Lime Pie

So my wife asked me a while back what my favorite dessert was that I missed from years past when we did not eat a Paleo diet. I responded with my all-time childhood favorite: key lime pie. Fast forward to this past weekend, and a prior attempt later, we have have a full Paleo key lime pie that will rival even the toughest pie critics. And thanks to my wife’s hard work and dedication, she nailed the flavor, texture, and scent of fresh homemade key lime pie.

Five-minute chocolate brownie

Wait, what? Five minutes for a brownie? Paleo? Seriously? The answer to all of those questions is: YES!

Picture this: It is the evening. You want something sweet. You want something chocolaty. You want something that is small. You want something that does not take longer to make than it does to eat. Most of all, you want a brownie that is moist, hot, and tastes, well, like a rich chocolate brownie! Insert my microwavable individual Paleo brownie.

Orange Creamsicle Ice Cream

One of my favorite childhood memories was running after the neighborhood ice cream truck and buying a creamsicle ice cream on a stick in the hot summer sun. So naturally, I wanted to recreate this great familiar flavor in a Paleo friendly recipe that I could share with the rest of the world.

The texture and more importantly the flavor will hit on smooth, rich, and just enough orange flavor to not overpower the experience but instead allow you to savor, close your eyes, and think back to yesteryear when you last had an orange creamsicle ice cream.

Sticky Sweet Chocolate Cupcakes

I wanted a portable chocolate treat that I could take with me while I travel and that would stick to my Paleo diet. So I created these rich chocolatey cupcakes that are sweet, sticky, and have that traditional cupcake texture we all know and love.

Banana Tapioca Pudding

Or as I call it at home “Paleo rice pudding” because the texture is identical to rice pudding.

The tapioca will soften its granules and the sweet smooth milk surrounding them will thicken into a pudding texture when cooled. The added bananas and cinnamon round out the taste in a savory deep sweet flavor that will leave the dessert dish empty and the family asking for seconds.

Butter Pecan Paleo Ice Cream

A cold rich sweet buttery taste that will bring back warm summer childhood memories with a mouthful of butter pecan ice cream. That’s the best way I can describe my latest Paleo ice cream recipe. Yes, I am well aware that it is the middle of a biter cold winter in most of the US right now. But can you really say ‘no’ to ice cream?

Mixed berry pound cake

I love cake! Well, I love pie too but I used to eat cake about 6 times a week, on average, before I changed over to the Paleo lifestyle. So naturally I miss that cake-like texture in my diet and wanted to incorporate them back into my food supply, just using natural real food ingredients.

With a little experimenting in the kitchen, the Paleo pound cake was produced successfully. The density and the texture will remind you of the normal pound cakes you have eaten in the past while the taste will rival any you could buy in the store.

Traditional Chocolate Souffle

Traditional dessert meets modern Paleo in my new decadent and feathery chocolate souffle recipe.

This traditional souffle recipe is best served hot, right out of the oven, with a sprinkling of finely shredded coconut on top, a heavy sweet coconut cream, or a touch of rich chocolate sauce.

Chocolate Peppermint Hard Souffle

With Christmas fast approaching I wanted to whip up something sweet that would smell, taste, and feel like the holiday and what better way to accomplish all of this than with chocolate and peppermint.

This Paleo dessert will leave your taste buds begging for more after each bite. Whether hot or cold, this souffle recipe makes a great after dinner dessert for yourself or for entertaining guests. The souffle, while satisfying and sweet, has a delicate texture on the inside and a perfect balance of sweet chocolate and cool peppermint.

Banana Custard

This recipe involves very simple ingredients and flavors which work very well together. The custard will be smooth and satisfyingly sweet, while the topping will bring out deep comforting Fall/Winter flavors, a complementing taste to the custard.

I found a great deal on organic bananas at Costco this past weekend and ended up with…well a lot of bananas. I could not allow them to go to waste, so I got creative in the kitchen.
