I love cake! Well, I love pie too but I used to eat cake about 6 times a week, on average, before I changed over to the Paleo lifestyle. So naturally I miss that cake-like texture in my diet and wanted to incorporate them back into my food supply, just using natural real food ingredients.
With a little experimenting in the kitchen, the Paleo pound cake was produced successfully. The density and the texture will remind you of the normal pound cakes you have eaten in the past while the taste will rival any you could buy in the store.
Ingredients:
Cake:
Round cake baking dish
1/2 cup raw honey, melted
6 egg whites
2 tsp vanilla extract
1 tsp almond extract
1 cup of coconut flour
1/2 cup of tapioca flour
2 tsp baking soda
1/4 tsp salt
1/4 cup coconut sugar
1 1/4 cup unsweetened almond milk
Topping:
1 tbsp coconut oil
6oz cleaned fresh blueberries
16oz cleaned sliced fresh strawberries
1/4 cup raw honey
Directions:
Pre-heat the oven at 350.
In a medium mixing bowl combine all of the cake’s dry ingredients and mix well.
In a large mixing bowl combine the egg whites, extracts, and the melted honey. With a hand mixer on low slowly work the ingredients until the mixture begins to peak and become fluffy.
Slowly add the mixed dry ingredients into the large wet ingredient mixing bowl while continuing to mix well.
Grease the cake baking pan well using coconut oil.
Evenly distribute the cake mixture into the cake pan and gently tap the top of it so that the mixture settles flat and even into the pan.
Place the cake pan into the oven on the enter rack and bake for approximately 45 minutes or until golden brown — Check for doneness when a toothpick comes out clean from the middle of the cake.
Allow the cake pan to cool then simply place a plate over top of the cake pan and flip.

Topping Directions:
In a large pan over medium heat, add the topping ingredients.
Allow the topping mixture to come to a simmer and continue to stir.
Continue to cook the topping mixture until the berries are soft throughout.
Remove from heat and allow to lightly cool before serving.
To serve: Slice a piece of the pound cake and top with the fresh mixed berry topping from above and enjoy!
