Five-minute chocolate brownie

Wait, what? Five minutes for a brownie? Paleo? Seriously? The answer to all of those questions is: YES!

Picture this: It is the evening. You want something sweet. You want something chocolaty. You want something that is small. You want something that does not take longer to make than it does to eat. Most of all, you want a brownie that is moist, hot, and tastes, well, like a rich chocolate brownie! Insert my microwavable individual Paleo brownie.

This whole microwavable brownie experiment began last weekend when, while taking far too long to finish cooking the night’s dinner, I began to want a brownie. But I did not want to make a dozen brownies or spend an hour preparing and baking. So before long I found myself pulling ingredients off the shelves and creating the brownie recipe. And now that I’ve made it three times, I feel it is safe to share it with you.

Please note that cooking times may vary in microwave ovens; so adjust as needed.

Ingredients:

1 egg

3 tsp melted coconut oil

4 tsp maple syrup

1/4 tsp vanilla extract

1 tbsp almond butter

1 tbsp unsweetened cocoa powder

1/8 tsp baking soda

Pinch of salt (seriously, like a whole 1/16 tsp here)

1/2 tsp coconut flour

Directions:

In a small mixing bowl add the egg and vanilla extract and mix well.

Next add the melted coconut oil and maple syrup and stir the mixture again.

Add the almond butter and mix again to blend the ingredients throughout.

Carefully add the dry ingredients (coconut flour, cocoa powder, salt, and baking soda) and slowly stir the mixture so that it is smooth and evenly blended throughout.

Pour the brownie mixture into a microwavable safe bowl, allowing the mixture to lay evenly.

Place the bowl in the microwave and set the cooking timer for 1 minute.

Pause the cooking after 30 seconds and carefully run a fork along the outside of the brownie, gently pulling it from the sides of the bowl toward the middle.

Place the bowl back into the microwave and cook for the final 30 seconds.

To serve the brownie either carefully place a small plate against the top of the bowl and flip the bowl upside down, slightly tapping the bottom of the bowl to allow the brownie to slide out of the bowl and onto the plate. Or if you are like me, just eat the brownie directly out of the bowl.

Top the brownie with walnuts, shredded coconut flakes, or your other favorite topping.
