Garlic Yucca & Sweet Potato Chips

This simple recipe delivers great crispy texture and bold flavors, to give you that crunch may be lacking on the Paleo diet. These root vegetable chips make an excellent snack and are perfect on either a dinner or a lunch plate.

Ingredients:

1 sweet potato

1 yucca

Salt

Black pepper

Garlic powder

Approximately 4oz of coconut oil or avocado oil

Directions:

Heat the cooking oil in a large frying pan on medium-high heat.

Thoroughly wash the sweet potato and shave the yucca root.

In a processor, thinly slice the sweet potato and the yucca.

Carefully lay the raw sliced sweet potato and yucca into the hot frying pan and allow the edges to brown.

Carefully remove the now crispy slices from the hot oil and lightly drain excess oil before adding to a large mixing bowl.

Lightly sprinkle salt, black pepper, and garlic powder and toss the chips in the mixing bowl.
