Citrus Pulled Pork Roast

There are some wonderful flavors and aromas in this recipe that will invoke the Caribbean.

Whole lemons are the secret ingredient with this recipe, which blends well with garlic and all spice to balance flavors and entice taste buds.

Yields: approximately 6 adult servings

Ingredients:

2.5lbs pork roast

2 whole lemons, sliced

1/2 white onion, chopped

2 cups of water

1 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

1 tsp crushed dried rosemary

1/4 tsp ground sage

1/2 tsp ground cardamon

1/4 tsp ground cinnamon

1/2 tsp all spice

1 tbsp minced garlic

Directions:

In a large heavy bottom pan or pot, heat the oil over medium-high heat

Combine all the following spices and rub onto both sides of the pork roast: salt, pepper, garlic powder, paprika, rosemary, sage, cardamon, cinnamon, and all spice.

Sear both sides of the roast in the pan.

Pour into the pan the water, onion, and lemons.

Allow roast to simmer, covered, for three hours. Turn roast each hour.

Use two forks to pull apart the tender pork roast.

Once pulled, the citrus pork roast will simmer for an additional 10-15 minutes.

Once pulled, the citrus pork roast will simmer for an additional 10-15 minutes.

Allow the pulled pork roast to simmer for an additional 10-15 minutes, uncovered.
