There is nothing like a hot bowl of broth soup to warm the soul on a chilly evening and that is exactly what it does, with my simple version of an old family favorite. Like many broth based soups, this recipe is very simple and straightforward.
Ingredients:
1-1.5lbs of chopped chicken meat
4 cups of water
4 cups of chicken bone broth
1/2 tsp salt
1/2 tsp black pepper
1 tsp crushed dried rosemary
1/2 tsp dried thyme
1/4 tsp paprika
1/4 tsp garlic powder
1 bay leaf
1/4 tsp marjoram
1/2 tsp ground sage
2 large carrots, chopped
3 large celery stalks, chopped
1/2 large white onion, chopped
6 large leaves of lacinato kale, de-stemmed and chopped
1 tbsp olive oil
Directions:
In a large pot over medium-high heat, allow the olive oil to heat.
Add the chopped chicken and stir.
As the chicken is cooking, add all spices and continue to stir.
Once chicken has cooked, add 2 cups of water and stir again.
Add onions, celery, and carrots.
Add the chicken bone broth and 2 additional cups of water.
Allow soup to come to a light boil, then turn down heat to low-medium (simmer).
Let soup simmer, covered, for an hour. Stir on occasion.
For last 15 minutes, add the kale, stir and cover.
