Cauliflower Rice

Cauliflower rice is probably one of the quickest foods you can create while eating clean. It requires three whole steps in preparing: chop, heat, season, and well a forth: eat. Cauliflower rice is so easy a cave…well a Paleo cook can do it!

The cauliflower is such a versatile food that there are almost endless ways to prepare it: mash it, steam it, fry it, grill it, process it, etc. Each method will give it a different flavor and texture. But for today we will focus on turning it into a “rice”.

Ingredients:

1 cleaned and chopped head of cauliflower

1/4 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Directions:

Lightly process/pulse the cauliflower until it breaks a part into small shavings. Do not try to pulse every single last clump of cauliflower or you will risk turning the mixture into a mush/paste.

Heat a medium sized pan over medium heat with olive oil.

Add the cauliflower then the salt and black pepper.

Continue to stir while heating for approximately 3-5 minutes, or until heated throughout. Do not try to “cook” the cauliflower, just heat it.

Remove from heat and enjoy.

But do not stop here! This is just a base recipe for cauliflower rice. You can add an endless combination of spices and ingredients to completely change the flavor; think of Spanish rice, Dirty rice, etc! Get creative!
